3:00 you always have to cool your dough before adding any eggs to it, otherwise you will end up with tiny chunks of scrambled eggs in the mixture, which I believe that’s what happened to yours 4:10 given the lumpy texture.

Those measurements for the all purpose flour was definitely not 90g lol, that was way too little and the mixture was still watery for me. I had to add like 150g more for it to be doughy like the video

For a real "chocolate con churros" experience, chocolate has to be thicker. Add 5 more grams of corn starch. Finally, add some granulated sugar to the churros. I am a Spaniard.
