前回、糸寒天で作った琥珀糖→https://youtu.be/lHxFjYikeBU
着色料なしの琥珀糖、というコメントが多かったので作ってみましたが、
コンフィチュールを入れると結晶化しづらく
若干グミっぽい食感になりました。

▷材料:
-りんごのコンフィチュール
りんご(今回は大紅栄という品種を使用)1個
レモン皮 1個分
レモン汁 1個分
グラニュー糖 各60g(合計120g)

■作り方
1.りんごはよく洗って皮をむき、5mmくらいの角切りにする。
2.レモン皮、レモン汁、グラニュー糖を入れて火にかける。
あまりかき混ぜすぎず、煮詰める。(目安1:52
赤いコンフィチュールにする場合は皮を入れて煮詰める。

-琥珀糖
糸寒天 5g
(粉寒天、棒寒天でも可。
棒寒天は糸寒天と同じ手順、
粉寒天の場合は水にふやかさず②へ)
水 200ml
グラニュー糖 350g
(上白糖は乾燥しにくくなる)

■作り方
1.糸寒天はたっぷりの水で戻す。
2.水を切った①、水200mlを入れて火にかけ、寒天を煮溶かす。
3.こして溶け残りを取りながら鍋に戻し、グラニュー糖を加えて煮詰める。
4.温度差があると寒天液が固まってしまうためコンフィチュールを軽く温めておき、
煮詰まった寒天液に混ぜる。
5.クッキングシートを敷いた型に流し入れ、固まるまで冷ます。
6.固まったらら型抜きして、1日乾燥させる。
7.グラニュー糖を周りにまぶし、2~3日乾燥させて完成。

混ぜすぎると寒天液が固まる前に結晶化してしまいますのでご注意ください。
乾燥は1週間行いましたが、3日以降固さ、結晶化の具合は変わりませんでしたので
4日と記載いたしました。
前回の琥珀糖の方が中に何も入っていない分、作りやすいです。

This recipe looks delicious and I love that you used agar. I'm definitely going to try making this recipe but I'll use my little silicone molds instead of cutting out the shape. I have a butterfly mold and a flower mold which are so pretty!

しかし果物を使った琥珀糖は経験がないのでとても美味しそうで、また作りたくなりました(´ω`*)

I couldn’t help notice the number of comments regarding the amount of sugar used in this recipe and thought I could share my own experiment with the same recipe (and in several fruit flavors), using less than 1/4 the amount of sugar used in this video. I simply substituted Splenda (zero calorie sugar) instead of regular granulated white sugar (the worst you could consume, and used it only to creat the hardness once combined with the lemon juice), and slightly increased the amount of Agar (or clear gelatin) used. Simple as that! :)
