This recipe was pretty good, my family loved the cookies both with and without the fillings, but there are a few things I'd like to point out for others!
-When making the filling, don't be lazy like me and actually whip the heavy cream and sugar before adding it to your cream cheese mixture! I didn't do this and instead whipped all of them together at once, and it resulted in me having to keep my filling in the fridge to keep it stiff enough. It still tasted good, but it didn't come out with the same texture as Hida's, probably because of that whipping error.
-This isn't the case with all recipes (ex. Cooking Tree's peach cake), but you can whip this by hand! I don't really have a hand mixer so I just sat and whipped it by hand with a whisk for about twenty minutes to get a stiff sort of meringue texture.8
-The cookies come out super stiff and firm (but not hard!) When baked, especially if you baked thicker ones like I did. I'd recommend letting them sit in the fridge after being filled so they soften up a little bit and so the filling is less likely to spill out everywhere when you bite it. I learned that lesson the hard way.
-Make two trays of rolled dough. I'll only had one tray to put mine in in the fridge and it made my cookies turn out a bit thick and I had to reuse a lot of the dough, very tedious. This recipe makes A LOT of dough. Like, two and and half of my fists put together. You really need two trays. It's very heavy and thick and hard to mix but it tastes pretty good in the end.
-Use the chocolate Hida uses!!!! I used melted chocolate chips and my dough turned out a little too stiff. If you'll notice, Hida's chocolate melts into a syrup, which most kinds of chocolate chips typically don't. Seriously, I accidentally burned mine getting it to melt. You can do this with chocolate chips, but I don't recommend it.
Overall, I give this recipe 3.5/5 stars. It was delicious even with all the errors I made and the family gobbled it up, but not only is the video a little bit unclear on how the dough was rolled out (something that tripped me up during the rolling pin process), but the cookies also naturally come out a little bit stiff, so I'd recommend refrigerating them to soften them up.
Overall summary: Delicious, but tedious to make.
