■ 타르트지 (완성 후, 냉장고에서 1시간 휴지 필요)
100g 박력분
15g 아몬드 가루
15g 슈가파우더
1g 소금
60g (차가운) 무염 버터
1개 계란 노른자

■ 크럼블 (완성 후, 냉장고 보관)
15g 박력분
15g 아몬드 가루
15g 설탕
1g 소금
9g (차가운) 무염 버터

■ 아몬드 크림
50g 무염 버터 (크림화)
50g 설탕
1알 계란 (전란액 50g)
40g 아몬드 가루
10g 박력분

■ 사과 조림 (카라멜라이징)
50g 설탕
25g 무염 버터
2개 사과 (껍질 분리)

■ 데코용
슈가 파우더
피스타치오

※ 참고: 밑재료가 다 준비된 이후의 과정
1. 오븐 예열 190-200°C
2. 타르트틀에 반죽을 붙여서 냉장고 30분 휴지한다.
3. 타르트지 위에 누름돌 넣고 190°C로 예열된 오븐에서 15분동안 굽는다.
4. 누름돌을 제거하고 15분 더 굽고 식힌다.
5. 식힌 타르트지 위에 아몬드 크림 → 사과 조림 → 아몬드 크림 → 사과 조림 → 크럼블 순서로 올린다.
6. 예열한 오븐은 180°C로 세팅해서 40분 구운 후, 170°C로 내려서 20분 더 굽는다.
7. 실온에서 식힌 타르트를 하룻밤 동안 냉장고에서 숙성한다.
8. 다음날 슈가파우더와 피스타치오를 뿌려 장식하면 완성!
