I looked up nappage, as I was not sure if it was the same thing as just what we call 'fruit glaze' (it is), and I ended up learning something that I did not know about fruit glaze at all: it is generally made with apricot jam, but can be made with other fruits. I guess I always just assumed it was some sort of syrup or gelatin-like substance.

Every time an ingredient comes up on the screen that I don't know, I pause the video and look it up! Now I want to buy some feve tonka beans! The description makes them sound wonderful.

These videos are always a learning experience for me! Love this.

If anyone's wondering what "Féve Tonka" is, I did some digging – it's tonka beans, a very flavorful and aromatic spice, popular in gourmet kitchens. It's banned in the US for its high concentration of coumarin (a liver toxin), which is also found in common cinnamon (cassia bark). Small amounts are (like 1/4th a bean /person /day) are okay to consume, and slightly larger amounts if only consumed seldom. Its toxicity with humans isn't known exactly (due to testing ethics), so the daily safe amount has been made quite conservative (but you should still follow it to be safe).
