Oh my ! She's using Kiri cream cheese ! For years it was a staple of french children's afternoon "gouter" (the traditional afternoon snack after school, around 4pm, also known as "le 4 heures"). I myself loved that creamy taste. Kiri was the first cream cheese we had in France, years before we discovered its american counterpart.

I am a little bit confused. You have finished a dough for the Tart and then divided into 3 . After that you have only used the 120g dough. What happened with the 2 other dough each 160 g?

Question? Since you use so much butter, why not make it yourself? I have friends in Japan that go out and buy fresh milk. The first they do is boil it to kill bacteria but afterwards, they use it as they choose. Organic fed cows too. I miss buying raw milk. Raw= unpasteurized. It has its uses. Many cheese makers only buy Raw or have their own cows. I didnt use electric mixers when i made butter, mason jar and arm power. But as I hot older, I realized my mom just hated using power anything unless she needed it.
